In San Sebastian the food is already out on the bar, spiked to bread with cocktail sticks, and you help yourself standing up. At the end you tell the barman how many sticks are on your plate and he believes you. The done thing is one pintxo and one small glass per bar, then out and on to the next one, which is why a night here is a walk rather than a meal.

Flamenco close enough to hear the feet
A tablao is a room, not a theatre: thirty chairs, a guitarist, a singer and a dancer on bare boards a couple of metres away. The late set is the one the performers prefer and it shows. The paella nobody puts chorizo in

Nothing serious happens in a tapas bar before nine.
